Tizzie Lizzie and I have both been eating frozen lunches for a while now, for a variety of reasons Mostly because Tizz is kind of a bum in the lunch making department, and I am kind of a bum in the not being chubby division. We’ve arrived at a few anecdotal theories regarding the various brands of under 300 calorie frozen meals available. So we have a new project on the table: for the next few weeks, we’ll be officially reviewing our frozen meals, rating taste, fullness, visual appeal, and nutritional value.
I’ve recently re-stocked my freezer with enough meals for a few weeks, and I guarantee that Tizz has quite a few in her freezer in California. Let the games begin.
I also wanted to mention that along with frozen food weight loss attempts, I have been trying to incorporate more veggies into my diet, chiefly kale, because you can buy a big old bag and there’s enough leafy green in there to last a month. I followed a how-to from NotMartha for blanching and freezing kale, and you can see a bag of the frozen greens in the bottom of that pic. I haven’t eaten any of the frozen stuff yet, and I’m a little worried because I wasn’t too careful about timing the blanching and drying the kale, but I’ll keep you updated.

I don’t think you should be worried about not paying much attention during blanching, you wouldn’t have harmed the kale. I encourage you to sautee it (right out of the freezer) with some minced garlic. Even if you left it in the boiling water too long during blanching it’ll turn out great. I usually sautee until some bits have turned brown and crispy, it doesn’t take too long over medium high heat. I hope it’s delicious!
